Recipe: Pistachio Berry Oatmeal Stuffed Baked Apple

Pistachio Berry Oatmeal Baked Apple, with walnuts, pistachios, fresh raspberries, molasses, a little honey, oats, and a loooooot of spices. Topped with homemade butter & date syrup.

 

Ingredients:
  • 4 apples
  • 2/3 c of dried oats
  • 1/3 c of hot water (plus more if needed)
  • Cinnamon to taste
  • Butter
  • 1/3 c milk of choice
  • Handful of pistachios and raspberries
  • Pinch of salt and cinnamon
  • Sweetener to taste

 

Directions:
  1. Preheat the oven to 400 degrees F. Line baking dish with parchment paper to help prevent sticking. 
  2. Cut the tops off the apple and cut out the center of the apple to create a hole in the core. This is where the oatmeal stuffing will go, so be sure to make it large enough. Cut up the center of the apple you just cored out, and chop it up. This will also be part of the stuffing. Sprinkle the insides of the apple with cinnamon and a bit of sweetener (optional).
  3. Stir together the oatmeal, chopped apple, hot water, and all of the remaining ingredients. Stir until well incorporated, and adjust seasonings and sweetener to taste. The oatmeal should absorb a lot of the water, but the stuffing mixture shouldn't be too wet or too dry. It should be the texture of thick oatmeal.
  4. Fill each apple with the oatmeal stuffing. Bake for 35 to 40 minutes, until the apples are softened.
  5. Serve immediately with vegan butter and date syrup drizzled on top.

Inspired by one of my twitter faves and teachers, I think personally think this meal can satisfy breakfast lunch dinner midnight snack 😋. I love baking fruit! The fresh raspberries added a tangy sweetness to the oatmeal. I personally find organic oats to not only be more economical, but easier to find, but if you avoid oats you can probably try this with kamut or quinoa flakes instead. I posted how I made this in my stories yesterday, so I hope you screenshotted them! Just add walnuts, pistachios, and berries of choice. Would you try this?
